With the Mid-Autumn Festival approaching, mooncake production and sales are entering their peak season. Sinan County in Guizhou Province, leveraging its unique local matcha resources, has innovatively developed a matcha and Yunnan ham mooncake by deeply integrating high-quality local matcha with traditional mooncake-making techniques. Thanks to its unique and fragrant taste and authentic local flavor, this mooncake is gaining increasing popularity in the market.

In this mooncake production workshop in Sinan County, the aroma of tea and mooncakes mingled and filled the air. This innovative matcha and Yunnan ham mooncake's crust is made with flour and 2% matcha powder, supplemented with a small amount of lard and local honey. The filling uses Xuanwei ham as the main ingredient, and its unique tea flavor and authentic handcrafted craftsmanship have won the favor of many citizens.

Consumer Yang Xiuqiang said that the mooncake has a delicate and smooth texture and is not too sweet. With each bite, the sweetness of the mooncake is mixed with a light tea aroma, leaving a very pleasant aftertaste.

Qin Yubin, the head of a mooncake processing workshop, said that orders are steadily increasing, with purchases coming from all over the province. They are also selling to Beijing, Shanghai, and the Greater Bay Area.

Since its launch, sales have reached over 3,000 jin (1,500 kg), and are expected to exceed 10,000 jin (5,000 kg) before the Mid-Autumn Festival, with a total output value of around 350,000 yuan.

Hollow mooncakes are selling briskly, so a special flavor featuring Sichuan pepper leaves and sea buckthorn has been launched.

Besides the hot sales of various trendy mooncakes, traditional handmade mooncakes are also popular with consumers. In Taiyuan, Shanxi, the production and sales of local-style traditional handmade hollow mooncakes have entered their peak season, and production workshops are also in full swing.

At a traditional mooncake workshop in Jinyuan District, Taiyuan City, workers are busy making traditional hollow mooncakes by hand every day since September began. Everyone has their own task, and after kneading the dough, filling the mooncakes, pressing them into molds, and baking them in the oven, the fragrant hollow mooncakes are ready.

Wang Ying, a maker at a traditional handmade mooncake workshop in Jinyuan District, Taiyuan City, said that they produce 3,000 to 4,000 mooncakes a day, and the production has reached its peak in the last two days. The year 2026 is already earlier than in previous years.

Hollow mooncakes are a local specialty with a unique production process. When filling the mooncake, the filling is plentiful, but the mooncake itself is solid. After high-temperature baking, the sugar melts, shrinks in volume, and becomes a paste that adheres to the inner wall of the mooncake, creating a hollow center. These mooncakes have a thin crust, a hollow interior, and a crisp, delicious texture. The makers have also introduced hollow mooncakes with flavors such as Sichuan peppercorn leaves and sea buckthorn.

Wang Ying explained that local people pick pepper leaves from the trees, dry and crush them, then infuse them with the mixture, resulting in a pepper leaf aroma, while sea buckthorn has a fruity fragrance. (Source: CCTV.com)
