These 8 seasonal dishes from Jinan | A seasonal limited list I only dared to write after making four trips according to the solar terms (blogger's personal test)

To truly understand the food scene in Jinan, I made trips during each of the four solar terms: Qingming, Xiaoshu, Bailu, and Dongzhi. I discovered that what Jinan locals consider "delicious" isn't a static food map for all four seasons, but rather a menu that changes with the seasons.

The first time I made a mistake was in the summer when I asked for "milk soup with cattail shoots" at a restaurant. The waiter laughed and replied, "They're too old now. We serve lotus flowers." Later I realized that once you miss a seasonal dish in Jinan, you have to wait another year.

Springtime from Qingming to Guyu: Toona sinensis and cattail shoots are only available for half a month.

Spring in Jinan is short, but its flavors are exceptionally vibrant. The first flush of toon shoots around Qingming Festival are a glossy purplish-red, locally known as "toon sprouts." The most authentic way to eat them isn't stir-fried with eggs, but rather "toon mixed with tofu": lightly blanch tofu in boiling water, blanch and finely chop the toon shoots, and add only salt and a few drops of sesame oil. Older Jinan residents will smell the chopped toon shoots before eating, saying, "Only the first flush has a truly fragrant aroma."

At the same time of year, the cattail shoots of Daming Lake reach their peak crispness and tenderness within ten days. Milk soup with cattail shoots is known as "Jinan's No. 1 soup dish," using only the tender underwater stems, which, when split open, are as white as jade. Local gourmets have a particular way of drinking milk soup with cattail shoots: first, they lower their heads to smell the broth, then they pick up a piece of cattail shoot and chew it lightly, and finally they drink the soup, saying that this is how to distinguish between "lake delicacy" and "MSG-laden umami." After Grain Rain (a solar term), the cattail shoots become tough and are no longer considered worthy of being served.

Summer - From Minor Heat to Major Heat: Lotus Banquet is a limited-time skin for Jinan.

In Jinan, summer is characterized by "lotuses on all sides and willows on three sides," and lotus banquets only take place between the Lesser Heat and the Beginning of Autumn each year. The most stunning dish is fried lotus: select petals of white lotus from Daming Lake that are about to bloom, coat them with a thin layer of egg white batter, and lightly fry them, then sprinkle with a pinch of white sugar. The petals are crispy on the outside and tender on the inside, with a delicate fragrance when you bite into them. Locals remind you that fried lotus must be eaten while it's hot; if it cools down, the oil will seep back out, and the aroma will dissipate.

Lotus leaf porridge is a refreshing and nourishing summer staple for Jinan locals. Fresh lotus leaves are washed and placed on top of cooked rice porridge. After turning off the heat, it simmers for about ten minutes, turning the porridge a pale green color and giving it a lotus fragrance. Those who are particular about their porridge use lotus leaves from Daming Lake and only use new rice. They drink it without stirring, first savoring the "lotus leaf oil" on the surface. Served with a side of chilled, crisp lotus root salad, summer is truly complete.

Autumn – From White Dew to Frost's Descent: The Golden Intersection of New Rice and Hairy Crabs

After the White Dew solar term, the Mingshui fragrant rice in Zhangqiu begins to be harvested. This rice, irrigated with water from Baimai Spring, has a thick layer of rice oil when cooked in autumn, and its aroma is slightly sweet. Locals are very frugal with the new rice: they only make plain porridge or steamed rice with spring water, without any side dishes, eating a few bites on its own to savor the freshness of the rice just harvested from the field. After the Frost's Descent solar term, the new rice becomes old rice, and the rice oil thins out.

From the Autumn Equinox to Frost's Descent, it's the peak season for Yellow River estuary hairy crabs, and the saying "nine for females, ten for males" holds true in Jinan. Because the Yellow River flows through Jinan, locals don't necessarily prefer Yangcheng Lake crabs; they value Yellow River estuary crabs more. When steaming the crabs, place a slice of ginger with the belly facing upwards to ensure the crab roe is firm. The dipping sauce uses only minced ginger and fragrant vinegar—simple and uncomplicated, to avoid overpowering the crab's natural freshness.

Winter - From the Winter Solstice to the Twelfth Lunar Month: Memories of the New Year with Crispy Pot and Sour Dipping Sauce

As December arrives, "Su Guo" (酥锅, literally "crispy stew") begins to appear on the stoves of Jinan residents. Su Guo is a typical New Year's special; fish, meat, kelp, lotus root, and cabbage are layered in a clay pot, then simmered with vinegar and sugar until the bones are tender and the meat is falling apart. It's best enjoyed chilled. Every family has its own recipe; the local home-style version I had was slightly sour and sweet, with kelp and lotus root being even more sought after than the meat. It's made around the winter solstice and is perfectly seasoned by the New Year.

On the streets of Qushuiting in winter, the traditional "sour hawthorn" stalls of old Jinan only open. Unlike ordinary candied hawthorns, these are pitted hawthorns stuffed with red bean paste, sprinkled with sesame seeds, and coated with sugar boiled in spring water, resulting in a translucent sugar coating. A bite in the sub-zero temperatures reveals a crisp sugar coating, cool hawthorn, and soft, chewy red bean paste. Locals say that sour hawthorn is only available in cold weather because the sugar will caramelize in hot weather, preventing the formation of that crispy outer layer.

The blogger concludes: Jinan's seasonal dishes aren't about internet hype, but about the rhythm of the springs. In spring, snag a bite of cattail shoots; in summer, a lotus petal; in autumn, a handful of new rice; in winter, a pot of crispy stew. Miss it, and you'll have to wait until next year.

Practical Tips: From around Qingming Festival to Guyu, ask for "milk soup with cattail shoots" at time-honored restaurants around Daming Lake; make reservations in advance for lotus banquets around Xiaoshu; buy new rice in autumn in Mingshui, Zhangqiu; every family has a different taste of crispy pot in winter, so it's best to eat at a local friend's house; seasonal dishes don't wait, so don't hesitate if you see "lotus" or "cattail shoots" on the menu.

Eating according to the seasons is the right way to experience a city.
